Wrap the Salad …

Last Sunday, after a lovely but very long wedding day, which we had planned and organized for the past year, i did not really feel like leaving the house to hunt for food. unfortunately the fridge was more or less empty and the craving for something to munch on, like tacos or enchiladas, was almost unbearable. but what to do if you have no wraps, no meat and no fish in the house? … be creative …

thanks to my weekly organic produce box i always have some vegetables and salads at home … and in this case the dream of a juicy yummy enchilada turned into a healthy but not less yummy salad wrap. they are the best alternative and their biggest advantage is that you can eat more of them 🙂

these salad wraps are the perfect light lunch or starter for a summery dinner party with friends, or in my case the ideal sunday night munchies …


What you need:

  • Large Salad leaves
  • Hummus
  • 3 mini Zucchini or squash in different colors (i used yellow and green ones)
  • 1 small onion
  • 1 teaspoon turmeric
  • any kind of herb, i have used cilantro but you can also use parsley or any other herb
  • roasted black sesame
  • desiccated coconut
  • greek yogurt
  • salt and pepper

How to prepare:

  • peel the onion, dice it up and fry it in a pan with a little bit of olive oil
  • add the turmeric to the frying pan
  • cut the zucchini in medium sized cubes and add to the pan, fry until soft but still crunchy, then take from the stove
  • take the salad leaves and spread some hummus on them (1 teaspoon per leave is fine)
  • add the zucchini cubes
  • sprinkle with sesame, herbs and coconut
  • add 2 or 3 small heaps of greek yogurt

serve immediately and enjoy …
